Zinc rich power balls

Power Balls - veal and liver meatballs naturally rich in zinc and essential vitamins and minerals.

Zinc is a vital mineral that needs to be provided by what we eat as we cannot produce it ourselves.

Zinc contributes to a vast number of essential functions in our bodies supporting our immune system. It produces superoxide dismutase, an enzyme that collects and removes free radicals. It is vital in DNA synthesis and protein production, aids in wound healing.

Very importantly, it is responsible for growth, repair and maturation of reproductive organs. It's vital for young children, especially boys, as zinc supports the production of testosterone.

Recipe

Ingredients

  • 400g of organic veal mince

  • 200g of calf's liver

  • 1 red onion

  • 3 cloves of garlic

  • 2 celery sticks

  • 2 large carrots

  • 2 eggs

  • A handful of fresh parsley and dill

  • 1 tbsp cumin

  • 1 tbsp turmeric

  • 1 tbsp oregano

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 2 tins of organic chopped tomatoes

  • 150 ml Ossa chicken bone broth (or your own homemade)

  • 2 bay leave

  • 2 sprigs of rosemary

  • 2 sprigs of thyme

7 simple steps

1. Finely chop the onions, garlic, carrots and celery. Blend the carrots and celery; or all the vegetables, in a blender for speed and convenience.

2. Sautee all the veggies in extra virgin olive oil together with all the spices. Let all the flavours marry for a few minutes on medium heat.

3. In the meantime chop the liver finely or whizz it up in a blender too.

4. Mix up the meat, sauteed veggies, eggs and fresh herbs.

5. Roll up 12 meatballs and sear them in the frying pan until golden brown on the outside.

6. Assemble the meatballs in a baking dish, pour two tins of chopped tomatoes in the bottom of the dish, add bay leaves, rosemary and thyme. Lay the meatballs and roast in 220C oven for 30minutes.

7. Serve with pasta or eat on its own.
